About this one.
It is deliberately plain. A sada papad sits beside dal, rice and a sabzi without arguing with any of them, which is exactly the job. Put a masala topping on it and it becomes a starter instead.
Because there is so little in it, the dal has to be right. Ours is cleaned whole and ground in small lots rather than bought in pre milled.

How to cook it.
- Roast over a low flame, turning every few seconds until it blisters and lifts. No oil needed.
- Or fry in hot oil for five to eight seconds, pressing it flat once so it does not curl.
- Drain for a moment before it goes to the table. It crisps further as it cools.
