Because it lies flat it works as a base. Chopped onion, a little chutney, sev over the top, and it is chaat without any assembly worth the name.
It is also simply easier for a child to hold than a papad, which is not a small consideration in the shops that move the most of it.

How to cook it.
- Hot oil, ten to fifteen seconds, turning once.
- Drain flat rather than in a heap so they stay rigid.
- Top with onion, tomato and sev for a quick chaat.
